It is hardly possible to formulate any estimations regarding your chances to get recognized as refugee or to receive international protection in general without to know your individual background and your story. However, there is a harmonized asylum system in Europe and a so-called Dublin regulation is determining the responsible country for an applicants' asylum procedure. As you study in Poland and Poland, as I assume, issued a study visa and subsequent residence permit for you, German authorities will most likely ask you to apply in Poland for international protection respectively. Nevertheless, you may consider other options to obtain a residence and work permit in Germany - especially as (University) graduate, as you mentioned.
I would recommend you to discuss your perspectives individually with an (migration/employment) expert i.e. in a counselling office. For a first overview, you may want to check the Make it in Germany website as well.
