A change is legally possible. As soon as you get a training contract from an enterprise (for professions which are taught in the so called "Dual system" - in company and school) or a vocational training school (for some professions that are ,taught only at school you can apply for a visa according to § 16 a sentence 2 Residence Act to do an apprenticeship.
However, at least two cirsumstances must be observed:
1. You shouldn't put at risk your residence permit you - as I suppose after reading your description of your current situation - were issued in accordance with Section 16(b) AufenthG (Residence Act).
This implies taking up your studies and joining the lectures regularly until you are issued the residence permit for vocational training and improving your German at least to the B1 level in the meantime.
2. Language requirements for vocational training: A professional training in a school (like nursing, chemical-technical assistant and the like) requires at least a B2 level at the beginning. With a B1 level you could only start an apprenticeship where no language certificate is required, e.g in the handicraft range (cooking, bakery, piping construction, in some federal states also nursing assistance). Nevertheless, even B1 won't suffice to pass the exams at school. In sum: If you firmly intend to do an apprenticeship, try to get your German on a healthy footing.
